Food. FOOOOOD!
I am SHAMELESSLY addicted to the Food Network. My particular favorites are Alton Brown, Ace of Cakes, Paula Deen, and Rachael Ray. I don't really watch for the information and recipes...I mostly tune in just to look at food. Mmm. Food.

One time a few years ago, I got the urge to try one of Rachael Ray's "30 Minute Meals". It was Greek meal, involving Spanakopita, Baklava, and a Greek Salad. It was positively delicious, and it also took me exactly one hour and forty-nine minutes to prepare. "30 Minutes" my ass.

So I'm going to give you a little treat today...a TRUE 30 minute meal, designed by ME. Which obviously means it is NOT very diet friendly. But delicious! And fast! And children will eat it!

THE MENU:

Caesar Salad
Dorito Casserole (stay with me...I promise it's good)
Hot Fudge Pudding Cake

THE RECIPES:

Caesar Salad:
Buy Caesar Salad Kit at Walmart. Assemble.
Ready in: 2 minutes

Dorito Casserole:
1 lb. ground beef or ground turkey
1 can enchilada sauce (red sauce)
1 can tomato soup
1 can cream of mushroom soup
1 small can sliced olives (optional)
cheddar cheese, grated
Doritos

Brown meat and drain. Stir in sauce and soups. In a 9x13 dish, crunch up Doritos to cover the bottom of dish. Layer ingredients in the following order: meat mixture, olives, cheese. Top with more crunched up Doritos. Bake at 350 for about fifteen or twenty minutes.
Ready in: 25 minutes

Hot Fudge Pudding Cake:
1-1/4 c. sugar, divided
7 T. cocoa, divided
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1/3 c. butter, melted
2 tsp. vanilla
1/2 c. brown sugar
1-1/4 c. HOT water
vanilla ice cream (optional - if you're CRAZY)

Mix 3/4 c. sugar, 3 T. cocoa, flour, baking powder, and salt. Stir in milk, butter, and vanilla. Stir until smooth. Pour into an ungreased 8x8 pan.

Mix remaining 1/2 c. sugar, 4 T. cocoa, and brown sugar; sprinkle mixture evenly over batter. Pour hot water over top; DO NOT STIR.

Bake at 350 for about 35 minutes (until center is almost set). Cool for about 10 minutes. Serve with vanilla ice cream; spoon sauce from bottom of pan on top.
Ready in: Pop this in when your casserole is done and it'll be ready when you're finished eating.

Now get to it!!

I love Ace of Cakes. I blame Duff for my recent addiction to cake. I CAN say the Dorito casserole IS good. Have I made it? No. I'm better at eating what others make :)

Speaking of Everyday Italian, my grandparents got me her cookbook for Christmas and there is the BEST and quickest recipe for pasta primavera and it is TO DIE FOR. If I can make it, anyone can!!

I love Paula. I just love to hear her say her name with her thick southern accent. What I love the most about Paula is that she throws caution and fat and calories to the wind and says "fuck it,it tastes good honey".And I have been looking for my puddin cake recipe for years, yours sounds pretty much like it. We will be pigging out on it Friday night. Thanks Stacey.

Mmmm, I don't watch the food network but maybe I should. My husband's favorite chip is Doritos so I will have to try that casserole out.
Thanks :-)

No, I haven't fallen off the face of the earth (although I kinda would like to at times.) I love AB! Can you have a TV boyfriend? His Feasting on Asphalt is one of my favorite series. I'm addicted to RR too! I never fix any of her meals and she annoys the heck out of me, but yet I can't stop watching her!

My husband's 40th birthday is this summer and he wants one of Duff's cakes. Too bad they are like a gazillion dollars! If only I lived near you!

I just copied down your Dorito Casserole recipe! Sounds sooo good minus the Olives! LOL. And I love Paula Deen and Ace of Cakes. Those are my favorites. And Paula's sons that do Road Tasted aren't too bad to look at either!!
